Where exactly were theese crosses?
If they were in his room I'd like to point out that crosses repel vampires, so why whould Red have crosses?
By the way, if there ARE seven crosses, why care? Can there not be random clutter anymore without people coming up with theories? If not, I'd like to talk about those rations. For random reasons I belive they contain fish, this might be a reference to dogs liking fish.

you look at some piece of bread and see Jesus and think something about it. I don't. I don't know why some do, but that's okay.
If one sees a cross in there, some may think something, some may not. Seven crosses though. There was a reason, weather it means something now or not. I like detective shows, in fact, I love them. And after a while, these little details become clues. and I feel penumbra is filled with them. so seeing 7 crosses, weather the number means anything or not, the crosses itself could.

Well, seven is a magic number. Crosses are holy.
He perhaps made seven crosses since its more fun than just one? And I think we'll never find out. Even if it is seven crosses, even if it turns out Red was religious, it will just be trivia/lore. There probably wont be a dungeon riddle later: "How many crosses hast thou seen in thy journey?"

maybe Red was in charge of the incineration chamber and hald some kind of burial rites for whoever or whatever was burned there, and created a cross for each creature burned on his watch.

There's actually some things that don't add up.
The room that you burn red in is referred (in the hps scripts) as "entercomb"
The crosses are named "Wooden_Crosses"
Red's ashes are named "ashes_ash"
The sound location that places red's sounds+voice is titled "redfinal"

Maybe the crosses represent each of the seven deadly sins and have some connection to RED's spirituality. And as someone said, maybe he didn't want to commit suicide because it would be deemed a sin by God, or something.
