I think if you've had an account with youtube for over a year you can upload videos over 15 minutes. Also if you have enough subscribers unless they changed things.

Yep, we can't. But if you really want to take a pause from playing even for a bit, you can uncheck the Full Screen bit from the Graphic options in the Launcher before playing. You can pause the game and minimize the window, then come back and play later when you've collected yourself.
Though it is much better playing the game in a straight run, IMO. Even though it gets irritating if you die (over and over, which is my case in the third monster encounter :p).

Over in the showcase section you can find a custom story version of Justine that apparently can be saved just like the vanilla game.

You simply pick up the lantern so the rope holding the door would break. After that it's just useless clutter you carry around. Much like the extra tinderboxes.

in is not exactly like that but since the story is kind of open at explanations then each one can believe whatever he wants.
