Probably already posted here... but my list probably haven't changed a lot.
It's a bit hard to make a real Top 10 list, categories are easier.
Best First Person Shooter: Half Life 2, also my absolute favourite.
Best Third Person Shooter: Metal Gear Solid 3, until Gears of War 3.
Best Strategy: Starcraft, wins by far.
Best RPG: The Elder Scrolls: Oblivion, really a cut above everything else.
Best Adventure: Shadow of the Colossus, most touching game ever made.
Best Hack n' Slash: Devil May Cry 4, simply more attractive than the others.
Best Fighting: Tekken 5, since I haven't got ahold of many others.
Best Online: Halo 3, the most advanced online shooter that can be found.
Best Retro: Doom, unlimited kickass.
My favourite list would probably be:

#2: Starcraft
#3: Doom
#4: Halo 3
#5: Shadow of the Colossus

Mine's a tie between Thief II: The Metal Age and Assassin's Creed, although from a critical standpoint I'd have to give the medal to Thief. Let's hope Thief IV doesn't disappoint.

My most favourite would be The Elder Scrolls IV: Oblivion. Big world, lots to do and to add via mods, and I love Fantasy and old time so it is totally my kind of game.
(Hm, thinking of it, Oblivion uses physics, perhaps someone should make a mod that you can use doors like in Amnesia.
)Other games I love to play are World of Warcraft, but not playing it to farm dungeons but for the lore, I am on a role play server there though role playing is bleeding to death pretty much.
That's pretty much the games that I still play from when they came into existance, other games which lack freedom and replay-value pretty much end up in a box after one or two playthroughs. I hope Amnesia doesn't, assuming I'll be able to gather the guts to play through it.
