I dont quite understand how to use the model editor, can someone please explain.

The model editor itself doesn't create new models. It's more of a way for amnesia to assign attributes to models you have made (In maya or blender); such as whether it's a lever, wheel, grabbable object or static.
On how to use the model editor:
Look it up at the wiki - it should explained quite well there
