It's nothing as new as changing the protagonist's age, race, job, personality, hair color, how rich he is, etc. They're all just aspects that come together to form a character. Just because it's different doesn't necessarily will mean it'll be better, or even that different for that matter. It may be a bit different in certain cases, but some aspects will affect more than others, and I really think gender is one of the least influential in doing such a thing.

Why people won't make a game where you could change gender, color and species in the fly and it would affect the gameplay.

Variety is good, and again Dodgy : It's not just because you can play as a female, I'm just as excited to play as a toddler in a survival horror because I'm not playing as a (yet another) 20-40 year old full grown man.
