I believe there are types of mushrooms in like D&D or something that uses Sonic attacks to kill it's prey.
Excuse me for nerding things up here, but I believe that you're talking about shriekers, although they aren't capable of attacking or moving, so that's not very frightening. Although there is a monster called the vine horror, which is essentially an ambulatory (and man-shaped) mass of vines, which is sort of similar. But I really hope that Amnesia won't draw on Dungeons and Dragons. Because that's just kind of sad.

Plus, plant-men aren't scary. One open flame and they're gone.

Well, I do think some plants, fungus, etc can be scary.
