The original gameplay demo differs very much from the current game and had a scarier look to it. What happened? And did the original idea for the game differ greatly?

I think he's referring to the beta gameplay video or perhaps one of the early trailers (that I believe were never intended to be in the final game, but rather only as a tease).

My guess is that it had something to do with FG's decision to make SOMA a more story-driven thriller in order to differentiate it from Amnesia's straight-up horror.

Yes - this makes SOMA look a LOT more like Amnesia in the style of how things progress. Super creepy opening, small puzzles with music jingles as you complete them. The general feel is very Amnesia-y, and I kinda like it. It feels more like the FG I originally knew.

Not to say SOMA was bad the way it was. It was just different. It was more Amnesia-y than AMFP.
