I'm not even sure if this is a dumb question or not, but here goes. I noticed the quests in scripting and in gameplay videos, but I've never had anything show in-game about quests. Is there a reason for this?

Quests were part of an older design, it was changed to be the mementos instead. So it is called Quest in script simply as we did not want to re-write all scripts with a new specific script.
