Is it possible to enable subtitles (english or italian) for developer commentary? Are there any transcriptions of these commentary on internet?

No, there is no subtitles to the commentary.

As someone having intermediate listening skills I had hard times to understand commentary.

I had trouble trying to understand them myself as well, they tend to mumble like they are reading to them self and it does make it hard to hear

Itself also at times difficult to understand, if I recall correctly.
