Reskinning an entity!

I've looked around and I haven't really understood the whole process of reskinning an entity. The object I'd like to reskin is "crude_man_chains_statue.ent" and make him look more human-like. can someone who knows of a detailed tutorial or something that would be greatly appreciated thanks
