Yes, it seems to be nearly impossible to do binaural recordings for a 3D environment if the player is allowed to move around free.

But (a) maybe it is possible to do binaural recordings for certain directions and distances and use interpolation for the rest, or (b) maybe it is even possible to simulate real binaural recording by using a "virtual" dummy head.
