Also Mandus was in Mexico and perhaps learned things about the human-slaughter/blood sacrifices from the aztecs cult - for getting much power (the paranormal is reality in Amnesia) 
 
Look at the "Pig-Church" and whereon the pig-cruzifix stands = an aztec cult statue-like pedestal!  
Nice catch, but that's concept art...it might not actually be in the actual game. These were released around the time when they weren't exactly going for a full-fledged, all-out sequel to TDD yet. Things may have changed substantially
