Rectal muscles have difficulty propelling solid matter upwards. There's a reason why sitting is the most comfortable position (or squatting) for defecating. Furthermore, due to their density, feces are hardly buoyant in air. They are more likely to succumb to gravity and fall down immediately as soon as they are out of the anus. The only form of shit that could possibly fly out with high upwards force is diarrhea, but it wouldn't appear as solid as what is shown in the picture.
