Assassin's Creed II is an amazing game that flows smoothly and takes you through an amazing and breathtaking tour of the Renaissance with a fairly dramatic plot.
ACIII is a clumsy clusterfuck of horrible controls, unsympathetic characters, and mechanics that the developers must have thought "Ok, this is kind of cool, lets throw this in without thinking about how it affects other mechanics and call it a day."

Isn't the second description equally applicable to Assassin's Creed II? Sure the level design is good, but the flow is not what I would call smooth, the characters are one-dimensional bordering on intolerable and the plot is the most cliche thing ever (haven't finished it though - I guess I was about halfway to 60% finished when I abandoned it). Even considering all its flaws, I thought the first Assassin's Creed was a much better game - even though I hate the modern time Templars vs Assassins storyline BS.

Well, I don't think I ragequit a single time in ACII, and in fact beat it in one playthrough.
ACIII I've rage quit 3 times today alone. It's just a clunky game that always seems to do the exact opposite of what I tell it to do.
And the guards are EVERYWHERE. I checked the minimap and there weren't any guards on the roof. I climbed onto the roof to survey the area, and then a guard magically appeared behind me.
Now UPlay isn't even letting me on. FML.
