Windows 8.x is a perfectly fine gaming platform with many advantages over Windows 7. Add Classic Start and it's a lot better than anything else. You have been rumbling on the forum for like two yeas about that. Get over it!
Also if you remove the stock OS on laptops there is a high chance you will run into problems with proprietary software for FN-key management, wifi toggles, keyboard illumination etc. This is not the topic to discuss that but keep such personal tastes/prejudices to yourself next time.

Now back on topic, indeed 12GB are not needed. With 8GB you will be just fine. And don't buy a laptop with the purpose of playing one, two or three specific games on it. It is wrong on many levels. If you want to be able to play another similar game in a year from now with descent settings (not ultra-high or anything) you need to step-up to a 760M or up. That's my recommendation, after that it's up to you.
