Well, it depends on what you're trying to remember. If you're trying to remember the exact sentencing then you will most likely fail. But if you only remember the most vital parts of the dialogue such as directions and landmarks then it's quite easy, if you don't pick up all quests at the same time that is, subtitles might also help to remember.

Here is the way Gothic handle with quest descriptions. After you talk to a NPC, you will get a new entry in your diary/journal. Then you can read what the protagonist has written:

Spoiler below!

"To become a member of Gomez' people in the old camp, I should get in touch with Thorus."
...
"Thorus told me I should speak with Diego, when I want to be one of his people in the old camp. Diego will test me."

"Thorus has instructed me to expel a bandit named Mordrag from the old camp. How I do that he has left me. In addition, no one may learn that Thorus behind it."
...
"Mordrag adheres at the South Gate on the back of the castle."

How is for example Morrowind and Skyrim worse than that?

Morrowind looks correct. In Skyrim this just don't work.

But why? The game explains your orders, like shown on my screenshot. You have to talk to X about Y after solving Z. How doesn't that work?

Here are mods for Skyrim
http://www.nexusmods.com/skyrim/mods/11135/?
http://www.nexusmods.com/skyrim/mods/32695/?

"This mod improves the quest descriptions in vanilla game, so that you have a clear idea of where you should go or what you do there in addition to finding the quest marker. Let's face it - the quest descriptions were pretty bad, specified not know exactly where you had to go and force an all the time to play with visible quest markers. This affects approximately 250 quest objectives and descriptions, the more than 160 quests Castle, the descriptions were rather vague or did not exist."

And this is what I also experienced all over 300 hours.

To go back to Risen 3, here I created a short video to show some fun with the monsters and combat skills. Don't wonder why it looks so easy. My hero is very strong after 55 hours and this are only "harmless creatures". The animations out of combat are very authentic, but in combat it looks crappy compared to previous PB games :-(
